These doughnuts are an autumn tradition in New England orchards. Reducing the cider concentrates the apple flavour.
They're best eaten warm on the day.

Method
- Boil the cider until reduced to 100ml. Cool.
- Mix the flour, baking powder, spices and brown sugar. Stir in the cider, butter, egg and buttermilk to make a soft dough. Chill for 30 minutes.
- Roll out to 1.5cm thick and cut into doughnuts with holes.
- Fry at 180°C for 2 minutes each side. Drain and roll in cinnamon sugar.
Cook's noteThey can be baked in a doughnut tin at 190°C for 12 minutes.
