Baci di Dama

'Lady's kisses': small hazelnut biscuits sandwiched together with dark chocolate.

These little biscuits come from Piedmont, the home of hazelnuts. Two domes are joined with chocolate to look like a kiss.

Chilling the dough keeps the domes round.

Method

  1. Mix the hazelnuts, flour, butter and sugar into a dough. Chill for 30 minutes.
  2. Heat the oven to 170°C / 150°C fan. Roll into 40 small balls and put on lined trays.
  3. Bake for 12–15 minutes. Cool completely.
  4. Melt the chocolate and sandwich pairs of biscuits together. Leave to set.
