A good chilli builds flavour in layers: well-browned beef, softened onions and peppers, toasted spices, then a long simmer so everything melds together.

A square of dark chocolate and a splash of vinegar at the end might sound unusual, but they add depth and balance. Serve with rice, soured cream and grated cheese.

Method

  1. Brown the mince in the oil in a large pan over a high heat. Lift out.
  2. Cook the onion and pepper for 8 minutes until soft. Add the garlic and spices and cook for 1 minute.
  3. Return the beef with the tomato purée, tomatoes and stock. Simmer gently for 45 minutes, stirring now and then.
  4. Add the kidney beans and simmer for 10 minutes more.
  5. Stir in the chocolate and vinegar and season well. Serve with rice and toppings.
