Method
- Mix the mince, breadcrumbs, Parmesan, egg and garlic. Roll into small marble-sized balls.
- Soften the onion and carrots in the oil for 5 minutes.
- Add the stock and bring to a simmer. Drop in the meatballs and pasta.
- Cook for 10 minutes until the pasta is tender and meatballs cooked.
- Stir in the spinach until wilted. Season and serve.
