Mince and tatties is Scotland's everyday comfort food. The key is browning the mince well so the gravy has proper depth.
A little oatmeal thickens the sauce the traditional way, but a spoonful of cornflour does the job too.

- Brown the mince in the oil in a large pan, breaking it up, until dark and crumbly. Add the onion and carrots and cook for 5 minutes.
- Stir in the stock, Worcestershire sauce and oatmeal. Simmer for 35–40 minutes until thick, adding water if needed. Season.
- Meanwhile boil the potatoes for 15–20 minutes until tender. Drain and mash with the butter and milk.
- Serve the mince spooned beside the mash.
