'Devil's chicken' gets its name from the chilli heat. Flattening the bird helps it cook quickly and evenly.

It's also great cooked on a barbecue.

Method

  1. Spatchcock the chicken by cutting out the backbone and pressing it flat.
  2. Mix the oil, lemon, garlic, chilli, rosemary, pepper and salt. Rub all over the chicken and marinate for at least 30 minutes.
  3. Heat the oven to 220°C / 200°C fan. Roast skin-side up for 40–45 minutes until crisp and cooked through.
  4. Rest for 10 minutes, then cut into pieces and serve with lemon wedges.
