Texas Chili

Chunks of beef slowly simmered in a rich, smoky sauce of dried chillies. No beans, Texas style.

Texas chili is all about beef and chilli. Using chunks instead of mince gives a heartier texture.

Dried chillies give real depth, but chilli powder works too.

Method

  1. Brown the beef in batches in the oil. Remove.
  2. Cook the onion for 5 minutes, then add the garlic and spices for 1 minute.
  3. Add the purée, stock and beef. Bring to a simmer.
  4. Cover and cook gently for 2½–3 hours until the beef is very tender.
  5. Stir in the cornmeal to thicken and simmer for 10 minutes. Season.
