Apple dumplings are a simple autumn pudding. The apples soften inside the pastry and the filling melts into a sticky sauce.

Choose apples that hold their shape, like Braeburn or Cox.

Method

  1. Heat the oven to 200°C / 180°C fan. Mix the brown sugar, raisins and cinnamon.
  2. Roll out the pastry and cut into 4 squares big enough to wrap each apple.
  3. Sit an apple on each square, fill the core with the raisin mix and top with butter.
  4. Bring the pastry up around the apple, pinch to seal, and use trimmings to make leaves.
  5. Brush with egg, sprinkle with caster sugar and bake for 30–35 minutes until golden. Serve with custard.
Cook's noteAdd a little chopped walnut to the filling for crunch.
