Crostata is found in every Italian bakery. The pastry, pasta frolla, is soft and slightly cakey.

Use a good-quality jam, as it's the star.

Method

  1. Rub the butter into the flour and sugar. Add the egg, yolk and zest and bring together into a dough. Chill for 30 minutes.
  2. Heat the oven to 180°C / 160°C fan. Roll out two-thirds and line a 23cm tart tin.
  3. Spread with jam.
  4. Roll out the rest, cut into strips and arrange as a lattice.
  5. Bake for 30–35 minutes until golden. Cool before slicing.
