Dressed crab is the taste of the British seaside. You can buy crabs ready-cooked from a fishmonger, which saves time.

The white meat is sweet and delicate, while the brown meat is rich, so they are kept separate in the shell.

Method

  1. Twist off the legs and claws and crack them to pick out the white meat. Check carefully for shell.
  2. Pull the body from the shell, discard the grey feathery gills and scoop out the brown meat from the shell.
  3. Mix the brown meat with the mayonnaise, mustard and breadcrumbs. Season the white meat with lemon juice.
  4. Clean the shell, then spoon the brown meat into the middle and the white meat either side.
  5. Finely chop the egg white and yolk separately and arrange in lines with the parsley. Serve with bread and lemon.
