This pie is simple but satisfying. Lancashire cheese melts beautifully and has a gentle tang.

Serve hot with beans or cold with pickled red cabbage.

Method

  1. Heat the oven to 200°C / 180°C fan. Soften the onions in the butter for 10 minutes.
  2. Boil the potatoes for 8 minutes until just tender, then drain.
  3. Mix the onions, potatoes, cheese and mustard. Season with pepper.
  4. Line a 23cm pie dish with two-thirds of the pastry, fill, then cover with the rest and crimp the edges.
  5. Brush with egg, cut a slit in the top and bake for 35–40 minutes until golden.
