A good meatloaf is moist and tender. Soaking breadcrumbs in milk before mixing is the secret.

Serve it hot with mashed potatoes, or cold in sandwiches the next day.

Method

  1. Heat the oven to 180°C / 160°C fan. Soak the breadcrumbs in the milk for 5 minutes.
  2. Mix the meat, soaked crumbs, onion, garlic, eggs, Worcestershire sauce, thyme and seasoning with your hands.
  3. Shape into a loaf on a lined baking tray.
  4. Mix the ketchup, sugar and vinegar and brush half over the loaf.
  5. Bake for 45 minutes, brush with the rest of the glaze and bake for 15 minutes more. Rest for 10 minutes before slicing.
