Making dumplings is fun with friends or family. Shop-bought wrappers make it quick.

Pan-frying gives a crispy base.

Method

  1. Mix the pork, chives, ginger, soy, sesame oil and wine.
  2. Put a teaspoon of filling in each wrapper, wet the edges and pleat to seal.
  3. Fry in the oil for 2 minutes until golden, then add 100ml water and cover. Steam for 6–8 minutes.
  4. Mix the vinegar with a little soy for dipping.
