Thin, crispy-edged beef patties smashed onto a hot pan, topped with melted cheese in a soft bun.

Smashing the beef onto a very hot pan creates a crispy, caramelised crust. Two thin patties are better than one thick one.

Use beef mince with around 20% fat for the best flavour.

Method

  1. Divide the beef into 8 loose balls. Heat a heavy frying pan until very hot.
  2. Put a ball in the pan and smash flat with a spatula. Season well.
  3. Cook for 2 minutes until crispy, then flip and top with cheese. Cook for 1 minute.
  4. Stack two patties on each bun with onion, pickles and sauce.
