These are nothing like Scottish oatcakes. They're soft and flexible, ideal for rolling up around a hot filling.
The batter needs an hour to rise, so start it before you want to eat.

Method
- Mix the oatmeal, flour, yeast, sugar and salt. Whisk in the milk and water to make a smooth batter.
- Cover and leave in a warm place for 1 hour until bubbly.
- Heat a lightly oiled frying pan and pour in a ladle of batter, swirling to make a thin pancake.
- Cook for 2–3 minutes each side until golden. Fill with cheese, bacon or eggs and roll up.
