Boston Cream Pie

Despite the name, this is a cake, not a pie. It's the official dessert of Massachusetts.

Make the custard ahead so it's cool and set.

Method

  1. Heat the oven to 180°C / 160°C fan. Line a 23cm cake tin.
  2. Whisk the eggs and sugar until thick, fold in the flour, baking powder and butter. Bake for 20–25 minutes. Cool.
  3. Heat the milk. Whisk the yolks, sugar and cornflour, pour on the milk and whisk back in the pan until thick. Add vanilla and cool.
  4. Split the cake in half and fill with the custard.
  5. Heat the cream, pour over the chocolate and stir until smooth. Pour over the cake and chill.
