This cake is American, named after Samuel German who created a type of baking chocolate.

The coconut pecan frosting is the star.

Method

  1. Heat the oven to 180°C / 160°C fan. Line two 20cm cake tins.
  2. Beat the butter and sugar, add the eggs, then fold in the flour, cocoa and buttermilk. Bake for 25–30 minutes. Cool.
  3. Cook the evaporated milk, brown sugar, yolks and butter over a low heat, stirring, for 10 minutes until thick.
  4. Stir in the coconut and pecans. Cool.
  5. Sandwich and top the cakes with the coconut mix.
