Foo yung is a filling omelette cooked in a wok. It's quick and makes the most of leftover chicken.
Serve with rice or chips and a little gravy.

Method
- Stir-fry the onion and mushrooms in 1 tbsp oil for 3 minutes. Add the chicken and beansprouts for 1 minute.
- Beat the eggs with the soy sauce.
- Add the rest of the oil to the pan and pour in the eggs. Cook until almost set.
- Fold over, cook for 1 minute and scatter with spring onions.
