This curry is a British Chinese invention, milder and sweeter than Indian curries. The sauce is thickened with a quick roux of flour and curry powder.
Serve with egg fried rice, or chips for the full takeaway experience.

- For the sauce, cook the finely chopped onion in the butter for 5 minutes. Stir in the curry powder, five-spice, turmeric and flour for 1 minute.
- Gradually whisk in the stock, then add the soy sauce and sugar. Simmer for 10 minutes, then blend until smooth.
- Stir-fry the chicken in the oil for 5 minutes until golden. Add the onion chunks for 3 minutes.
- Pour in the sauce and peas and simmer for 5 minutes until the chicken is cooked through.
