Catfish fillets coated in seasoned cornmeal and fried until crisp. Serve with tartare sauce and coleslaw.

Fried catfish is a Southern classic. The cornmeal gives it a lovely crunch.

Any firm white fish works if you can't find catfish.

Method

  1. Soak the fish in the buttermilk for 15 minutes.
  2. Mix the cornmeal, flour and spices with salt.
  3. Coat the fish in the cornmeal mix.
  4. Fry in 2cm of hot oil for 3–4 minutes each side until golden.
