Method

  1. Simmer the ribs with the ginger in water for 1 hour until tender. Drain and dry.
  2. Toss the ribs in cornflour and fry at 180°C for 4–5 minutes until crisp.
  3. Stir-fry the onion, pepper, chilli and garlic in 1 tbsp oil for 2 minutes.
  4. Add the ribs, salt and five-spice and toss well.
