The Cantonese-style sauce is bright and tangy. Prawns cook in minutes, so this is a quick midweek meal.

Use raw prawns for the best texture.

Method

  1. Stir-fry the prawns in 1 tbsp oil for 2 minutes until pink. Remove.
  2. Stir-fry the vegetables in the rest of the oil for 3 minutes.
  3. Add the ketchup, vinegar, sugar and juice and bring to the boil.
  4. Thicken with the cornflour mixed with water. Add the pineapple and prawns and toss.
