Mongolian lamb is a restaurant favourite. The meat is quick-fried, then tossed in a sticky sauce.

Lamb neck fillet is tender and good value.

Method

  1. Toss the lamb in cornflour.
  2. Fry in batches in 2 tbsp oil until crisp. Remove.
  3. Stir-fry the onion, garlic and ginger in the rest of the oil for 2 minutes.
  4. Add the hoisin, soy and sugar and bubble. Toss in the lamb and spring onions.
